Every Day CSA Roast Mix Veggies
My recipe is simple but delicious!!
I took carrots, beets, potatoes and cut them up into bite-sized pieces. I also chopped up two fennel bulbs and tossed everything in camelia oil, fresh dill and I cut some of my own fresh herbs (rosemary, sage and oregano) as well as some crushed garlic, Himalayan salt and black pepper.
I roasted everything at 400F just until the veggies were tender. OMGosh….yummmm. We had leftovers last night and I just heated everything up and topped it with some feta cheese. So delicious!!
