Fennel Almond Soup
Recipe of the Week: Fennel Almond Soup
Fennel is similar to an onion but has a delicious licorice-like taste! It is great in stir fry, raw in salads or anywhere you might use an onion.
- 2 tbsp butter
- 1 onion, sliced
- 2 bulbs fennel, sliced
- 1/4 cup ground almonds
- 4 cups chicken stock
- 1/2 cup whipping cream
- salt and pepper to taste
- 1/4 cup slivered almonds, toasted
In a large pot, melt the butter then add the onion, fennel and saute till softened. Add the ground almonds and chicken stock and bring to a boil. Lower heat and simmer for 20 minutes till veggies are soft. Puree the soup in a food processor or blender till smooth. Return to pot and add the cream, bringing to a boil then simmering for 5 minutes. Garnish with slivered almonds and fennel sprigs to be extra fancy.
