Fried Sage Leaves

While it may seem like roast chicken is the best use of sage, we ask you to think outside the box. Fried sage leaves are a delicious snack or appetizer and a great use of this savoury herb. From Canadian Living


  • 1 egg yolk
  • 3 tbsp water
  • 1 tsp anchovy paste
  • 3 tsp all-purpose flour
  • 1/4 tsp hot pepper flakes
  • 1 cup olive oil
  • 24 large sage leaves, with stems attached


  1. In a bowl, whisk together egg yolk, water and anchovy paste until combined.
  2. Whisk in flour and hot pepper flakes, let stand for 5 minutes.fried sage leaves
  3. In saucepan or small deep skillet, heat oil over medium heat until deep fryer thermometer registers 325 degrees F (160C).
  4. Holding stem, dip sage leaf into batter until well coated. Deep-fry in batches and turning once until golden brown (about 2 minutes).fried sage leaves
  5. Drain on paper towel and enjoy. fried sage leaves
