City Girl on the farm

I am a city girl, born and bred. Food comes from supermarkets. Packaged in plastic and grown by unknown people….recently I made a change in my life and started sourcing locally grown food. I wanted to make a commitment to reducing my environmental impact. This week I went to visit Riverbend Gardens to see what was available on the farm. I picked up a dozen eggs, cilantro, mint and basil. As a thank you for this fresh food I am sharing a recipe which is great for breakfast, lunch, dinner or snack… Egg Bread
  • 4 eggs
  • 2 spring onions chopped
  • 4 slices of bread
  • Handful of cilantro chopped
  • Pinch of salt
  • Pinch of red chilly powder
  • Pinch of turmeric
  • 4 teaspoons of ghee or cooking oil
Mix all the ingredients except oil, as for an omelette in a bowl Heat frying pan, medium to low heat, add a spoon of oil Dip bread piece in mixture and place in frying pan Cook for a minute and then flip to cook other side of bread Enjoy.. I made both egg bread and omelette from the same mixture. Simple food from local ingredients is my type of community supported agriculture. Now what to do with the mint and basil….
