Oven Roasted Beets with Garlic
- 4 large beets (peeled & quartered)
- 6 cloves garlic, quartered
- 1 tbsp minced fresh thyme
- 2 tsp olive oil
- 1/2 cup orange juice
Preheat oven to 375F
Toss together beets, garlic, 1 1/2 tsp of thyme, and the oil in 9 x 13 dish. Drizzle OJ and cover dish with foil.
Roast until beets are almost tender when pierced with a knife (about 45 min).
Remove foil and sprinkle remaining thyme.
Roast until beets are tender, about 10 min.
