Super Lazy Cabbage Rolls

Recipe of the Week: Super Lazy Cabbage Rolls

From the kitchen of Andrew and Jamie Knack

  • 1 Head of Spiky cabbage chopped (approximately 3 cups)
  • 1/2 lb ground pork
  • 2 cups cooked rice (good way to use up leftover rice if you forgot how much 1 cup of rice actually is when cooked)
  • 1 Tbsp onion powder (we are saving time here but you can add chopped onion if you like)
  • Seasoning salt to taste

Brown the meat with onion powder (or onions) in large skillet and add the cabbage when meat is cooked. Add rice and seasoning salt. Stir it all around until cabbage is crisp tender as we all know how bad over-cooked cabbage is. A bit of water or oil helps soften the cabbage faster. Top with fresh or cooked tomatoes, and some soy sauce or lemon juice for a bit of zing. Eat straight out of the pan or if you have company, use plates. (Okay, that last part was added by Riverbend Gardens. If we were your company, we wouldn’t need plates. ;) )
